C-8 THREBEAN.TXT SUGAR FREE THREE BEAN SALAD 1 14 1/2 oz can grean beans, 1 14 1/2 oz can wax beans, drained drained 1 15 1/2 oz can dark red kidney 1 tsp EQUAL MEASURE or 3 packets beans, rinsed and drained EQUAL or 2 Tbs EQUAL SPOONFUL 1/4 cup thinly sliced onion 1/4 cup red wine vinegar 1 Tbs olive oil 1 tsp basil (dry) 1 clove garlic, minced 1/4 tsp pepper 1. Combine all ingredients in a large non-metalic bowl. Mix well. 2. Cover and refrigerate overnight. 3. Serve chilled. CHKSALAD.TXT CELESTIAL CHICKEN SALAD 4 cups diced cooked chicken 2 cups diced celery 1 4.5 oz jar whole mushrooms, 1/2 cup toasted pecan halves drained 1 cup mayonaise 4 slices crisp fried bacon, 1 cup sour cream crumbled 1 1/2 tsp salt 2 Tbs lemon juice NOTE: To toast pecans, place in a shallow baking dish and bake in a preheated 350 degree oven for 15 minutes. Cool. 1. In a large bowl, combine chicken, celery, mushrooms, pecans, and bacon. 2. In a second large bowl, stir together until blended the mayonaise, sour cream, lemon juice, and salt. 3. Add the chicken mix, tossing to coat. Chill thoroughly. 4. Serve in lettuce shells. Serves 6 - 8.
