QTURKCAS.TXT D-24 QUICK TURKEY CASSEROLE (Leigha) 2 cups bite size pieces of cooked 3 cups hot cooked brown rice (1 c turkey (or chicken) uncooked) 1 Tbs instant minced onion 1 4oz can mushrooms, drained 1 10 oz can mushroom soup 1/2 tsp poultry seasoning 2 slices whole wheat bread 1 tsp butter 1. Mix turkey, rice, onion, mushrooms, soup, snd poultry seasoning. Pour into a 1 1/2 to 2 quart casserole dish. 2. Combine bread and butter in a blender or food processor. Make into crumbs and sprinkle over the casserole. 3. Cover and bake for 25 - 30 minutes in a 375 degree oven. Serves 6 - 8 SSMTBALL.TXT SWEET AND SOUR MEAT BALLS 1 1/2 lb ground beef 3/4 cup oatmeal 1 5 oz can water chestnuts, 1/2 tsp onion salt finely chopped 1/2 tsp garlic salt 1 Tbs soy sauce 1 egg 1/2 c milk (a little less) 1. Mix and make into 60 bite size balls. 2. Brown in oil until cooked (browned). SAUCE 1 8 1/2 oz can crushed pineapple 1 cup brown sugar 2 Tbs cornstarch 1 cup beef bouillon 1/2 cup vinegar 1/2 cup chopped green pepper 2 tsp soy sauce 3. In a saucepan, mix sugar, cornstarch, bouillon, vinegar, and soy sauce. Bring to a boil for 1 minute. 4. Stir in the pineapple and green pepper. Add the meatballs and cook 10 minutes.
