BURRITOS.TXT D-32 BEEF AND BEAN BURRITOS 1 lb lean ground beef 1 medium onion, chopped 1 Tbs spicy seasoning mix 1/2 tsp salt 1 can (8 oz) tomato sauce 1 can (15-16 oz) pinto beans, flour tortillas, warmed (8 - 10) drained and mashed chopped lettuce grated cheese chopped tomato 1. In a large skillet, brown ground meat and onion over medium heat until meat is no longer pink. Drain. 2. Sprinkle seasoning mix and salt over meat. 3. Stir in the tomato sauce. 4. Simmer over low heat for 10 minutes. 5. Stir in the beans and heat through. 6. Spoon beef mix into center of tortilla. Add cheese, lettuce, and tomatoes. Fold bottom edge over the filling. Fold sides to center and roll. SPICY SEASONING MIX 3 Tbs chili powder 2 tsp ground cumin 1 1/2 tsp garlic powder 3/4 tsp dried oregano 1/2 tsp red pepper (cayene) 1. Mix all ingredients. 2. Store in an airtight container. 3. Shake well before using. BEEFNOOD.TXT CROCK POT BEEF AND NOODLES 2 lb. lean stew meat 2 envelopes onion soup mix 2 cans mushroom soup 1 lb wide noodles 1 cup water salt and pepper to taste 1. Cut beef into bite size pieces and put in crock pot. 2. Add onion soup mix, mushroom soup, and water. Stir well. 3. Cook on low heat for 8 hours. 4. Cook noodles per package directions. Drain and stir into meat mix and serve. NOTE: You can omit the noodles and serve over rice. check occasionally to make sure the water is in and you don't lose the gravy.
