MARICHIK.TXT D-43 CREAMY MARINATED BAKED CHICKEN 4 boneless skinless breast halves 1/2 cup cottage cheese 1/4 cup finely chopped onion 1 Tbs lemon juice 1 Tbs dijon mustard 1/2 tsp lemon pepper seasoning 1/4 tsp dried oregano bread crumbs for coating (1/2 cup) 1 tsp salt Pam 1. Remove any fat from chicken breasts. 2. In a blender or with a mixer, blend the cottage cheese, onion, lemon juice, mustard, lemon pepper, and oregaano until smooth. 3. Add the chicken, coating all sides. 4. Cover and refrigerate for 8 hours or overnight. 5. Heat oven to 400 degrees. Spray a baking dish with Pam. 6. In a dish or pie plate, combine the bread crumbs and salt. Dredge each peice of chicken in the crumb mix, coating all around. Place in the dish. 7. Bake until golden, about 30 minutes. APPLRAIS.TXT PORK CHOPS WITH APPLE RAISIN DRESSING 4 pork chops 4 cups Pepperidge Farm Herb 1 cup unsweetened applesauce Seasoned Stuffing (8 oz = 3 cups) 2 Tbs margarine, melted 1/2 cup water (or more if needed) 2 Tbs raisins 1/2 cup chopped celery paprika salt and pepper to taste 1. Preheat oven to 400 degrees. 2. Mix applesauce, water, margarine, celery, raisins, stuffing, and salt and pepper. Spoon into a 2 qt baking dish. 3. Cut most of the fat off of the chops. Sprinkle with salt and pepper and lay on top of the dressing. Sprinkle with paprika. 4. Bake 35 minutes until chops are done.
