BR3CHPIE.TXT D-52 BROCCOLI AND THREE CHEESE PIE 1/2 cup cornmeal 4 eggs, slightly beaten 1/2 cup all purpose flour 1 10 oz pkg frozen chopped broccoli 2 tsp baking powder thawed and drained 1/2 tsp salt 1/2 cup cottage cheese 3 Tbs milk 1 cup shredded cheddar cheese 1 egg, slightly beaten 1 cup shredded monterey jack cheese 1/4 cup finely chopped onion 1/4 tsp salt 1/8 tsp pepper 1. Heat oven to 350 degrees. 2. Combine the cornmeal, flour, baking powder, and salt. 3. Add the milk, 1 egg, and onion. Mix well. 4. Grease a 9 inch pie plate. Pour the flour mix in the pie plate, spreading evenly on bottom and sides. 5. Bake 10 minutes and set aside. 6. Combine the 4 eggs, salt, pepper, broccoli, and cheeses. Spoon evenly over the crust. 7. Bake 45 - 50 minutes, until a knife inserted in center comes out clean. 8. Let stand 5 minutes before serving. Serves 6. BSHEPPIE.TXT BASQUE SHEPHERD'S PIE 4 slices bacon 2 medium potatoes, thinly sliced 2 Tbs sliced green onion 1 1/2 tsp parsley flakes pinch thyme, crushed 4 eggs 2 Tbs milk 3/4 tsp salt 1/2 tsp pepper 1/2 cup grated cheese (optional) 1. Cook bacon till crisp. Drain reserving 2 tablespoons of drippings. Crumble and set aside. 2. In the reserved drippings, cook the potatoes, onion, parsly, thyme, salt, and pepper, covered over low heat until potatoes are barely tender (about 20 minutes) stirring once or twice. 3. Beat eggs together with milk. Pour over the potatoes. 4. Cook, covered on very low heat, until egg is set (8 - 10 minutes). 5. With a wide spatula, loosen potatoes and slide on to a plate. Sprinkle bacon and cheese on top. Makes 2 servings.
