BBSPREAD.TXT BLUEBERRY SPREAD 2 cups blueberries (fresh or 3/4 cup water dry frozen) washed and drained 2 tsp lemon juice 1 1/2 tsp unflavored dry Artificial sweetener to substitute gelatin (1 envelope) for 3 Tbs sugar 1/4 cup water 1. Combine berries, 3/4 cup water, and lemon juice in a heavy saucepan. 2. Bring to a boil then reduce heat and simmer for 8 minutes, stirring frrequently. 3. While berries are simmering, soak the gelatin in 1/4 cup cold water to soften. 4. Remove berries form heat, stir in the gelatin and artificial sweetener. Mix well to disolve. 5. Turn into small, hot jars. Cover lightly and allow to cool. 6. Cover tightly and store in refrigerator. This is a delicious spread for toast, biscuits, etc.
