BSHEPPIE.TXT BASQUE SHEPHERD'S PIE 4 slices bacon 2 medium potatoes, thinly sliced 2 Tbs sliced green onion 1 1/2 tsp parsley flakes pinch thyme, crushed 4 eggs 2 Tbs milk 3/4 tsp salt 1/2 tsp pepper 1/2 cup grated cheese (optional) 1. Cook bacon till crisp. Drain reserving 2 tablespoons of drippings. Crumble and set aside. 2. In the reserved drippings, cook the potatoes, onion, parsly, thyme, salt, and pepper, covered over low heat until potatoes are barely tender (about 20 minutes) stirring once or twice. 3. Beat eggs together with milk. Pour over the potatoes. 4. Cook, covered on very low heat, until egg is set (8 - 10 minutes). 5. With a wide spatula, loosen potatoes and slide on to a plate. Sprinkle bacon and cheese on top. Makes 2 servings.
