CHICRICE.TXT CHICKEN 'N RICE BAKE (Leigha) 1 rounded cup raw brown rice 1 cup finely chopped celery 1 4 oz can mushrooms 1 10 3/4 oz can cream of mushroom 2 cups chicken broth (homemade soup or from bouillon cubes) 1 1 1/4 oz pk dry onion soup mix 1 cut up chicken or 6 - 8 pieces (reserve 2 tbs) skinned 1. Spread rice, celery, and mushrooms evenly in a 9 X 13 baking dish. 2. Mix soups and chicken broth. Pour over the rice and vegetables. 3. Place Chicken on top of mix, turning once to coat. 4. Sprinkle remaining dry onion soup mix over the chicken. 5. Cover and bake at 350 degrees for 1 to 1 1/4 hours (until rice is cooked (can bake at 275 for 3 - 4 hours). Serves 6 - 8
