CHIKRICE.TXT CHICKEN AND RICE CASSEROLE 3 slices bacon cut in thirds 3 pounds of cut up chicken or split 1 1/4 cups rice chicken breast salt and pepper 2 pk onion soup mix 2 cans mushroom soup 3 cups water 1. Preheat oven to 350 degrees. 2. Arrange bacon pieces to cover bottom of a 9 X 13 baking dish. 3. Sprinkle the rice over the bacon. 4. In a bowl, mix onion soup, mushroom soup and water. Pour about half of the mix over the rice. Salt and pepper to taste. 5. Arrange chicken pieces on top of the rice mix. Pour remaining soup mix over the chicken and sprinkle chicken pieces with salt and pepper. 6. Cover with foil and bake for 1 hour and 15 minutes (until chicken is tender and rice is done.
