CHKSALAD.TXT CELESTIAL CHICKEN SALAD 4 cups diced cooked chicken 2 cups diced celery 1 4.5 oz jar whole mushrooms, 1/2 cup toasted pecan halves drained 1 cup mayonaise 4 slices crisp fried bacon, 1 cup sour cream crumbled 1 1/2 tsp salt 2 Tbs lemon juice NOTE: To toast pecans, place in a shallow baking dish and bake in a preheated 350 degree oven for 15 minutes. Cool. 1. In a large bowl, combine chicken, celery, mushrooms, pecans, and bacon. 2. In a second large bowl, stir together until blended the mayonaise, sour cream, lemon juice, and salt. 3. Add the chicken mix, tossing to coat. Chill thoroughly. 4. Serve in lettuce shells. Serves 6 - 8.
