STEWCHIK.TXT STEWED CHICKEN AND GRAVY (Esther Orgeron) 1 cut up chicken, skinned 1 medium onion, chopped 1 bunch green onions, sliced 1/2 tsp garlic powder 1/2 cup oil 3/4 cup flour boiling water salt and pepper to taste 1. In a skillet, heat the oil and sear the chicken on all sides. Then place the chicken in a 4 - 6 qt pot. 2. Add the flour to the oil, and stirring constantly, make a brown roux. add this to the chicken in the pot. 3. Add enough boiling water to cover the chicken, stirring to make a thick gravy. 4. Add the onions, garlic powder, salt and pepper. 5. Bring to a boil, reduce heat and simmer uncovered for 45 minutes, stirring frequently. Serve with rice or potatoes.
