TORTILLA.TXT STACKED TORTILLA PIE 2 Tbs olive oil 1 yellow onion, chopped 3 garlic cloves, minced 1 red (or green) bell pepper, 1 lb ground meat (chicken, chopped turkey, or beef) browned 1 cup corn kernels with salt & pepper to taste 1/2 tsp ground cumin 1/4 cup chopped cilantro (or 4 flour tortillas, 10 inch size parsley 2 cups 4 cheese mexican mix grated 1 cup enchilada sauce cheese (or 1 cup each of cheddar and monterrey jack) 1. Preheat oven to 350 degrees. 2. Spray a 10 in pie plate with PAM. 3. Saute the onion in the olive oil for 4 minutes. 4. Add garlic and bell pepper and continue to saute for 2 minutes. 5. Add the meat, corn, cumin, and cilantro. Stir and cook till hot then remove from heat. 6. Put the enchilada sauce in another pie plate or large dish. 7. Dip a tortilla in the sauce on both sides and lay in the pie pan. 8. Cover with 1/3 of the meat mix and about 1/4 of the cheese. 9. Repeat steps 7 & 8 with two more tortillas. 10. Dip the 4th tortilla in the sauce (both sides and put on the top. 11. Cover with foil and bake for 30 minutes. 12. Uncover, sprinkle with the remaining cheese and bake for another 20 minutes. Cool 10 minutes before serving.
